Emily Isaacson, Ph.D., international nutritionist and humanitarian, researched the food sources of polysaccharides having immune modulating properties and presented her findings at Bastyr University in 1999, and was the first to use the term "essential glyco-nutrients" (EGN's), in her self-published book, Discovering Essential Polysaccharides, as well as terming these eight sugars as essential for immune function. This is key, that these sugars must be consumed each day, and are not produced by the body. We now await Emily Isaacson's upcoming book with this ground-breaking research... identifying the connection between intra-cellular communication and international communication between people and people groups.
 
Since 2006, the creation of The Rainbow Program has incorporated her findings into a food program to encourage daily consumption of these important immune system factors. These polysaccharides, found in various fibers, have been patented and sold as a supplement, to produce a maximum benefit to people on a standard diet, low in fiber; however, the food sources is of utmost importance in educating clients on the connection between nutrition and disease.
 
Essential polysaccharides, unlike essential amino acids and essential fatty acids (EFA's), must be consumed in the diet, to provide the structures necessary for inter-cellular communication. Inter-cellular communication is the basis for immune system recognition, cellular reproduction and auto-immune function. There are eight essential polysaccharides.
